Peter Morrell, Editor, comments “I have been using the 20cm GreenPan Premiere Frying Pan, and it’s a joy to use. The pan has the look and feel of quality about it. Apart from its healthy coating the two other things I liked about the design were firstly the ergonomically shaped handle, its elegant curves fitted my hand like a glove. The second aspect was the depth of the pan, and the almost vertical sides made it a useful cross between a frying and sauté pan.
“Now onto the cooking, because of its high-performance non-stick surface you can use less oil and not be as fussy about its temperature. My first test was to fry two eggs, sounds simple but easy to get wrong. The eggs cooked perfectly and slid easily out of the pan to top a mix of fried potatoes, onions and chorizo. The second was a more complex dish Filipino Tocino. This calls for thin slices of belly pork to be cured in sugar and salt. Then comes the tricky bit, the pork slices need to be cooked quite slowly to caramelize the sugar. In the past I’ve ended up with a layer of burnt sugar welded to the pan, but with the GreenPan Premiere Frying Pan the meat came out coated in the sugar, juicy and tender, with no sticking at all.
“One final point, I cook on an induction hob and many pans don’t hold or distribute heat very easily. Whereas this pan had consistent heat across the entire cooking surface. I think these pans are a great asset in anyone’s culinary arsenal.”
