Made from 100% malted barley and aged for four years in new charred American Oak barrels, the 108-proof spirit offers a nose of cereal malt and honey, with a sweet, medium body that carries notes of honey, pear, stone fruit and dates. Yellowstone Rum Cask Finish Kentucky Straight Bourbon

The second release of its Yellowstone Special Finishes Collection, Yellowstone Rum Cask Finish Kentucky Straight Bourbon starts with Yellowstone’s traditional bourbon mash bill and is finished for nine weeks in molasses-based Cuban rum casks, resulting in a flavourful blend of spice and tropical sweetness. The American Whiskey Masters Gold Medal-winning Rum Cask Finish features beautiful aromas of gingerbread, poached pear and freshly cut hay and boasts flavours of toasted marshmallow, crème brûlée, toffee and toasted oak, before a long honey finish alongside tobacco, clove and cocoa-seasoned oak. The nose is packed with vanilla, oak, pepper, notes of the earth, custard, shortbread, pepper and molasses. In the mouth it is very intense, assertive and slightly sharp, it’s on the dry side of medium. Flavours abound, there are cinnamon and cloves, burnt sugar and a good helping of toffee and butterscotch. There is a strong finish, which emulates the nose and includes caramelised biscuits”
