Reactive glaze is a finishing technique used on stoneware ceramics. The term ‘reactive’ refers to the chemical interaction between the glaze’s minerals and oxides during the high-temperature firing process. This reaction creates distinctive patterns, colours, and textures. The glorious results depend on factors such as the glaze composition, firing temperature, and kiln atmosphere, meaning no two pieces are exactly alike.

Peter Morrell, Editor, comments “In Japanese the word Hokan means to keep something safe or preserve it. So this bowl is intended to be used as both a cooking pot, and for fridge storage.

This a lovely bowl which can be used by any world cuisine, think Biryani with the lid sealed by dough or a Paella, but my immediate reaction was to use it in Japanese cooking.

Unlike the west, eating in Japan is an aesthetic experience, the size, colour, texture and flavours of the food are all carefully planned as is the tableware which is also a key element of the dining experience, and the Hokan bowls fit this perfectly, particularly with their flowing curves and reactive glaze finish.

In Japan the 600ml Hokan bowl would be called a medium Donburi, the same name as the protein and rice dish which is ubiquitous in the country. For its christening I cooked the most famous Donburi, Oyakodon, or parent-and-child, as it features both chicken and egg. I used my Hokan bowl as a serving dish, and a very attractive combination it made, (see image below). The bonus was that I turned the lid upside down and poured in some Kikkoman soy as a sauce dipping, making this bowl both suitable for a main and a side dish.
