I’ve been having lots of culinary fun with this jam, in its simplest form I paired it with a 7 Strength Davidstow Cornish Cheddar and some crusty bread, the sweet jam with hints of acidity and chilli with was the perfect foil. At the other end of the spectrum, I mixed a couple of spoonfuls into an anchovy-based sauce which I poured over thinly beaten fried chicken thighs, the jam added an entirely new dimension to what was already a highly complex dish. So, with a bit of imagination the Tracklements Shallot and Garlic Jam will elevate the ordinary into the extraordinary.”
