Right Royal Pickle

In celebration of Her Majesty’s Platinum Jubilee, Tracklements – purveyors of perfect planet-friendly pickles – have created a limited edition Right Royal Pickle.

Made with a selection of vegetables including tasty Lincolnshire onions and a careful combo of sweet (Muscovado sugar) and sour (malt vinegar) along with tamarind paste, chilli, all spice and lemon juice, this is everything you want in a pickle; a toothsome crunch, a sweet tang and a sharp bite.

I loved the balance of sweet and sour, and the addition of tamarind paste, which gave the pickle some fruity notes. There was also an impressive array of vegetables, including parsnips, carrots and courgettes to give it some crunch.

I paired it with Montgomery’s aged, unpasteurised cheddar, and it was delicious. It also proved to be a good match for pork sausages, and was a natural companion for a Melton Mowbray pork pie.

Not everyone will be able to make it to the official festivities to commemorate Her Majesty’s 70 year reign, but you can enjoy your own celebratory lunch with friends and family as we watch the pageantry on the television.
