Peter Morrell, editor commented “I have been trialling the 28cm non-stick frying pan and it performed remarkably well. I have been using it on a state of the art induction hob and found that the heat distribution across the entire surface of the pan was very good.

“My first dish was a Bolognese sauce that I have cooked more than 1000 times. The trick when cooking this is to brown all the ingredients before adding the seasoning and liquid. At this point a low simmer is essential to thicken it and make the meat melt to create a ragu. It kept the heat very stable which in turn created a rich flavourful sauce.

“The second dish was a chicken balti. I like to coat the meat in potato starch flour and then fry it to give a crispy coating like Japanese Karaage. The pan performed well with the task of shallow frying. Next came the sauce which again needed simmering which was fine. The temperature of the curry is raised at this point and the chicken stirred in. It all worked perfectly.

“I was very impressed with the frying pan’s performance while cooking these two and many more dishes.”
